Wineshark Home Cooking - Sauteed Prawns in Curry Sauce 椰汁咖哩大蝦


Ingredients (for 4):
  • Prawns - 300g
  • Tapioca starch - 2 tbsp
  • Okra - 8 
  • Garlic - 4 cloves
  • Shallot - 4
  • Red chili - 1
  • Dried chili - 3 
  • Curry powder - 1 tbsp
  • Coconut milk - 50ml
  • Sugar - 1 tbsp
  • Fish sauce - 1 tbsp
  • Basil - 1 sprig
Procedures:

1. Cut off the legs of the prawns, remove the intestines and slide open the belly.


2. Cut off the stem of the okra.


3. Cut the tip off the red chili and remove seeds, then cut into large pieces.


4. Cut the shallot into slices, and cut the garlic finely.


5. Wipe dry the prawns and coat on both sides with tapioca starch.


6. Heat the pan with 4 tbsp of oil, then add the prawns in to pan-fry both sides until golden brown. Remove for latter use.


7. Heat the work with the remaining oil, then add in shallot, garlic and dried chili. Stir-fry until fragrant. 


8. Add in curry powder and stir-fry until fragrant. Then add in 2 tbsp of water.


9. Add in red chili and okra, continue to stir-fry. 


10. Add in the prawns and coconut milk, mix well.


11. Season with fish sauce and sugar. Stir well.


12. Serve on the plate, scatter the washed basil on top.
