Ingredients (for 4):
- Prawns - 300g
- Tapioca starch - 2 tbsp
- Okra - 8
- Garlic - 4 cloves
- Shallot - 4
- Red chili - 1
- Dried chili - 3
- Curry powder - 1 tbsp
- Coconut milk - 50ml
- Sugar - 1 tbsp
- Fish sauce - 1 tbsp
- Basil - 1 sprig
Procedures:
1. Cut off the legs of the prawns, remove the intestines and slide open the belly.
6. Heat the pan with 4 tbsp of oil, then add the prawns in to pan-fry both sides until golden brown. Remove for latter use.
7. Heat the work with the remaining oil, then add in shallot, garlic and dried chili. Stir-fry until fragrant.
