Wineshark Recipe - 8. Grilled Fish Steak with Pepperonata

First we will make the Pepperonata. The ingredients are:
  • Olive oil - 5tbsp
  • Anchovy fillet - 2
  • Garlic finely - 3 tsp
  • Onion finely - 4oz
  • Red bell pepper - 1
  • Yellow bell pepper - 1
  • Tomato - 2
  • Green beans - 4oz
  • Zucchini - 1
  • Eggplant - 1
  • Capers - 1tbsp
  • Chives finely - 2tbsp
  • Water - 10oz
  • Salt - 1 tsp
  • White pepper powder - 0.5 tsp
  • Sugar - 0.5 tsp
  • Parsley finely - 2 tbsp
First use 2 tbsp olive oil to stir fry the garlic, anchovy and onion until turning golden colour. Then add 3 tbsp of olive oil, and put the bell pepper to further cook for another 10min until the pepper softens. Add the tomato to cook for another 5min. Finally put the green beans, eggplant and zucchini to the pot to cook for another 10min, plusall remaining seasonings and water.

For the fish steak, we will need to marinate with the following ingredients:
  • Sea salt - 1 tbsp
  • Thyme - 1 tsp
  • Lemon juice - 1 tbsp
  • Olive oil - 3 tbsp
  • Fish steak - 4 pieces
The fish steak is marinated for about 1 hour and then pan fried. After that put the pepperonata on the side.
