Wineshark Cooking Class - Deep-fried Battered Oysters 酥炸生蠔


Ingredients (for 4):

  • Oyster - 1 can
  • Tapioca starch - 3 tbsp
  • Worchestershire sauce - 2 tbsp
  • Tapioca starch - 5 tbsp
  • Flour - 3 tbsp
  • Tapioca starch - 1 tbsp
  • Egg white - 2
  • Water - 5 tbsp
Procedures:

1. Clean the oysters by pouring 3 tbsp of tapioca starch and rub the skirts thoroughly. Then rinse with water to remove all the dirt.


2. Blanch the oysters in boiling water for a while. Then remove and drip dry.


3. Mix the flour with tapioca starch, then add the egg white and water. Mix until the batter is smooth.


4. Coat the oyster with tapioca starch.


5. Put the oysters in the batter. 


6. Deep fry the oysters to light yellow, then take out and drip off the oil.


7. Deep fry the oysters again to remove the excess oil from the oysters until golden in colour. Then serve with Worchestershire sauce.
