Wineshark Cooking Class - Escalopes of Salmon Hollandaise Sauce 荷蘭汁焗三文魚柳


Ingredients (for 4):

  • Salmon fillet - 4 pieces
  • Salt - 1/2 tsp
  • Black pepper finely - 1/4 tsp
  • Flour - 1 tbsp
  • Clarified butter - 3.5 oz
  • Egg yolks - 2
  • Cayenne powder - 1 pinch
  • Lemon juice - 1.5 tsp
Procedures:

1. Season the salmon with salt and black pepper finely.


2. Coat the salmon with flour, dusting off the excess. 


3. Heat the pan with oil, and then pan-fry the salmon for half done.


4. Whisk the egg yolk on a warm water bath after adding the lemon juice. Gradually add the clarified butter. Season with cayenne powder to form the Hollandaise sauce.


5. Put the salmon on baking tray, and then pour the Hollandaise sauce on top.


6. Put in oven to bake for 2-3 minutes. Then serve.
