Wineshark Cooking Class - Five Spice Smoked Fish 五香燻魚


Ingredients (for 4):

  • Mackerel - 4 pieces
  • Mashed ginger - 1 tbsp
  • Spring onion (white) - 4 sprigs
  • Salt - 1/2 tsp
  • Chinese yellow wine - 4 tsp
  • Soy sauce - 1 tbsp
  • Chinese five spice - 1 tsp
  • Zhejiang vinegar - 1 tbsp
  • Slab sugar - 1
  • Sesame oil - 1 tbsp
  • Water - 3 tbsp
Procedures:

1. Clean the mackerel and drip dry. Then wipe it dry with kitchen paper.


2. Marinate the mackerel with smashed spring onion white, mashed ginger, salt and 2 tsp of Chinese yellow wine for one hour.


3. Remove the marinade and deep-fry the mackerel.


4. Add the marinade with 2 tsp of Chinese yellow wine, soy sauce, Chinese five spice, Zhejiang vinegar, water and crushed slab sugar. Cook with low heat until the sugar is fully melted. Then remove.


5. Put the mackerel in the sauce to soak for a while, then brush with sesame oil and serve.
