Wineshark Cooking Class - 涼拌三色蟲草花

Ingredients (for 4):

  • Cordyceps flower - 150 g
  • Turnip - 250 g
  • Salt - 1/2 tsp
  • Celtuce - 1
  • Sesame oil - 2 tsp
  • Sugar - 1 tsp
  • Soy sauce - 1 tsp
  • Fish sauce - 1 tbsp
  • Salt - dashes
  • White pepper powder - dashes
Procedures:

1. Peel the celtuce to remove the tough skin and fiber, remove the leaves and then cut into thin strips.

2. Blanch the celtuce strips in boiling water for a short while. Remove and soak in boiled water, then drip dry.

3. Peel the turnip and cut into thin strips.

4. Add 1/2 tsp of salt to the turnip strips, mix well, and leave for a short while.

5. Add boiled water to the turnip strips to fully submerge them. Leave it until ready to be mixed, then drip dry

6. Wash the cordyceps flowers and then blanch for a short while.

7. Remove the cordyceps and drip dry.

8. Add the turnip strips to the cordyceps, season with sugar, salt and white pepper powder. Mix well.

9. Add soy sauce, fish sauce and sesame oil, mix well.

10. Add the celtuce strips and mix well.
