Wineshark Cooking Class - 涼拌兩色苦瓜

Ingredients (for 4):

  • White bitter gourd - 1
  • Salt - 1/2 tsp
  • Green bitter gourd - 2
  • Salt - 1/2 tsp
  • Rice vinegar - 1 tbsp
  • Sugar - 1 tbsp
  • Sesame oil - 2 tsp
  • Fish sauce - 2 tsp
  • Garlic - 1 tsp
  • Red chili - 1
  • Chili bean sauce - 2 tsp
  • Chili oil - 1 tsp
  • Sesame oil - 2 tsp
  • Soy sauce - 2 tsp
  • Sugar - 2 tsp
  • Mirin - 1 tsp
Procedures:

1. Cut the white bitter gourd in half. Then scoop out the seeds and pulp. Slant cut into thin slices and put in a tray adding salt to mix well. 

2. Cut the green bitter gourd in half. Cut out the green portion without going to the white pulp level. Cut into pieces and put in a tray and adding salt to mix well.

3. Mix the sauce for the white bitter gourd, adding rice vinegar, sugar, sesame oil, fish sauce, garlic and red chili.

4. Mix the sauce for the green bitter gourd, adding chili bean sauce, chili oil, sesame oil, soy sauce, sugar and mirin.

5. Wash the bitter gourd with cold boiled water to wash away the salt. Wipe dry with kitchen paper. Put in the corresponding sauce. 

6. Cover the bowl with wrapping film and put in the fridge to marinate for at least two hours before serving.
