Wineshark Cooking Class - Stir-fried Pork Silver Skin with Sweet Mei Cai and Green String Beans 甜梅菜青豆炒豬板筋


Ingredients (for 4):

  • Pork silver skin - 250 g
  • Sweet preserved vegetable - 1/2 
  • Green string beans - 10 
  • Garlic - 2 tbsp
  • Oyster sauce - 1 tsp
  • Chinese yellow wine - 1 tbsp
  • XO sauce - 1 tsp
  • Fried shallot - 1 tbsp
Procedures:

1. Cut the pork silver skin into pieces. 


2. Marinate the pork silver skin with soy sauce, sugar, sesame oil and corn starch. 


3. Cut the green string beans into sections.


4. Soak the sweet preserved vegetable for a while. 


5. Squeeze the water from the sweet preserved vegetable, and then cut finely.


6. Cook the sweet preserved vegetable without oil until fragrant. Remove for use later.


7. Heat the wok with oil, and then add the chopped garlic finely.


8. Add the pork silver skin and stir fry until about 80% done.


9. Add the green string beans and continue to stir fry for a while.


10. Add the sweet preserved vegetable and then season with XO sauce. Stir well.


11. Add oyster sauce and then sprinkle with Chinese yellow wine. 


12. Serve and sprinkle with fried shallot on top.
