Wineshark Cooking Class - Steamed Salted Fresh Tilefish 蒸鹹鮮青筋


Ingredients (for 4):

  • Tilefish - 2 tails
  • Coarse sea salt - 1 tbsp
  • Ginger - 10 g
  • Oil - 2 tbsp
Procedures:

1. Descale the fish and clean up, then drip dry.


2. Wipe both sides and inside of the fish with coarse sea salt, then put on a steaming rack to marinate for 2.5 hours.


3. Cut the ginger into shreds.


4. Wash the fish to remove the salt, then put on the steaming dish, and sprinkle the ginger on top. 


5. Steam the fish for 6-7 minutes. Then spray with the heated oil.
