Wineshark Cooking Class - Potage santé

Ingredients (for 3):

  • Leek - 1 large sprig
  • Butter 
  • Potato - 1
  • Water - 3/4 litre
  • Toast - 1 slice
  • Salt - dashes
  • White pepper powder - dashes






Procedures:

1. Cut the leek white and chop into thin slices.

2. Cut the tender part of leek green into thin slices.

3. Cut the toast into small cubes.

4. Deep fry the toast cubes, remove and put on kitchen paper to soak up the oil. 

5. Saute the leek white with butter, season with some salt.

6. Add the sliced potatoes and water. After boiling, cover with lid and turn to lower heat.

7. When the potato are fully softened, blend the soup mixture. Season with salt and white pepper powder. 

8. Saute the leek green with butter, season with some salt.

9. Pour the soup in a serving bowl, then put some of the leek green in the middle, sprinkle with some bread toasts on the side.
