Wineshark Home Cooking - 11. Apple Upside-Down Cake (Tarte Tatin)

Ingredients (for 4):

  • Flour - 125 g
  • Salt - 2 g
  • Butter - 60 g
  • Egg yolk - 1
  • Water - 25 ml
  • Apple - 5
  • Butter - 60 g
  • Sugar - 100 g
  • Ground cinnamon - 1 g

Procedures:

1. Sift the flour and add salt, then blend the butter and the flour together with fingertips until the mixture forms coarse crumbs.

2. Make a well and incorporate the egg yolk and water. Form a ball with the dough, still working quickly with fingers.

3. Flatten the dough with the palm, pushing it away, until it is quite smooth. 

4. Chill the dough, wrapped in plastic, for about 30 minutes.

5. Lightly sprinkle the working surface with flour and roll the dough into a disk shape.

6. Preheat the oven to 180 degree Celsius.

7. Peel and core the apples. Cut into thick slices.

8. Place a pan on the heat and melt the butter. Add the sugar and caramelize over low heat. When the sugar begins to change color, add the apple slices in the pan.

9. Flatten the slices onto the cake pan, do not leave any gaps between the pieces.

10. Sprinkle with cinnamon, and then cover with the shortcrust pastry, pressing down firmly at the edges. Prick the pastry with a fork.

11. Bake for 35-40 minutes. The pastry will be golden.

12. Allow to cool a little in the pan before turning the tart out onto a serving plate.
