Wineshark Home Cooking - Mapo Tofu 麻婆豆腐


Ingredients (for 2):

  • Pork - 150g
  • Tofu - 1 brick (300g)
  • Spring onion - 1 sprig
  • Ginger - 2 tsp
  • Garlic - 2 tsp
  • Chili bean paste - 2 tsp
  • Water - 1 cup
  • Vinegar - 1 tsp
  • Miso - 1 tsp
  • Oyster sauce - 1 tsp
  • Soy sauce - 1 tsp
  • Sansho powder - dashes
  • Tapioca starch - 1 tbsp
  • Oil - 1 tbsp
Procedures:

1. Mince the pork. 


2. Cut the tofu into big cubes.


3. Cut the spring onion into small pieces.


4. Cut the ginger and garlic finely.


5. Mix vinegar, miso, oyster sauce and soy sauce with water. 


6. Heat the pot with oil, then stir-fry the minced pork until well-done under medium-high heat.


7. Add in half of the chopped spring onion, continue to stir-fry.


8. Add in ginger and garlic, and chili bean paste. Continue to stir-fry.


9. Add in the mixed sauce. 


10. Then add in the tofu and let it cook for 3 minutes.


11. Turn to low heat. Mix tapioca starch with 1 tbsp of water, then gradually pour in to thicken the sauce. Stir lightly to avoid breaking the tofu.


12. Add in the remaining of spring onion. 


13. Sprinkle sansho powder on top in serving.
