Ingredients (for 4):
- Minced dace - 300g
- Hard tofu - 2
- Dried shrimps - 50g
- Dried shiitake mushroom - 50g
- Lemon leaves - 1
- Pork - 150g
- Sugar - 1 tsp
- Oil - 1/2 tsp
- Tapioca starch - 1 tsp
- Salt - 1/2 tsp
- Oil - 1 tbsp
- Soy sauce - 1 tbsp
- Spring onion - 1 sprig
Procedures:
1. Prepare the minced dace.
2. Mince the pork as well.
3. Soak the dried shrimps until softened, then chop finely.
4. Soak the dried shiitake mushroom until softened, then chop into small pieces.
5. Chop the lemon leaves finely.
6. Mix the dace, pork, dried shrimp, dried shiitake mushroom in a clockwise direction.
7. Add the lemon leaves, sugar, and tapioca starch and continue to mix until it thickens and becomes very sticky.
8. Add some oil and then mix again. Finally add salt and mix well.
9. Cut the hard tofu into triangular shape.
10. Remove a bit of tofu from the middle, add a bit of tapioca starch and then stuff the dace meat in. Put some tapioca starch on the surface of the meat as well.
11. Heat the pan with oil, and then pan-fry the tofu, with the dace meat face down.
12. Continue to pan-fry until all the sides are golden colour.
13. Chop the spring onion into small pieces.
14. Add soy sauce, then pour in hot oil as the dipping sauce for the tofu.
