Ingredients (for 4):
- Mantis shrimp - 4
- Chinese yellow wine - 4 tbsp
- Marinade
- Water - 600ml
- Ginger - 15g
- Spring onion - 15g
- Salt - 2 tsp
- Chinese five spice - 1/2 tsp
- Chinese yellow wine - 5 tbsp
- Sauce
- Chinese yellow wine - 1 tbsp
- Osmanthus wine - 1 tbsp
- Candied osmanthus - 1/2 tbsp
Procedures:
1. Cut the spring onion into sections, and cut the ginger into slices.
2. Add water, spring onion, ginger, salt, Chinese five spice to the saucepan and bring to boiling. Turn to low heat and simmer for 10 minutes. Remove and put in a large bowl to cool.
7. Use scissors to cut open the shell on the back, cut away the legs and sharp pieces. Then put back in the marinade to soak for one hour.
