Wineshark Weekend Cooking - Wine-marinated Mantis Shrimps 醉香富貴蝦


Ingredients (for 4):

  • Mantis shrimp - 4
  • Chinese yellow wine - 4 tbsp
  • Marinade 
    • Water - 600ml
    • Ginger - 15g
    • Spring onion - 15g
    • Salt - 2 tsp
    • Chinese five spice - 1/2 tsp
    • Chinese yellow wine - 5 tbsp
  • Sauce
    • Chinese yellow wine - 1 tbsp
    • Osmanthus wine - 1 tbsp
    • Candied osmanthus - 1/2 tbsp
Procedures:

1. Cut the spring onion into sections, and cut the ginger into slices.


2. Add water, spring onion, ginger, salt, Chinese five spice to the saucepan and bring to boiling. Turn to low heat and simmer for 10 minutes. Remove and put in a large bowl to cool.


3. When it is cooled down, add 5 tbsp of Chinese yellow wine in, mix well.


4. Clean the mantis shrimp and drip dry, then soak in 4 tbsp of Chinese yellow wine for 15 minutes.


5. Steam the mantis shrimp for 5 minutes.


6. Put the mantis shrimp in the marinade to soak until it has cooled down.


7. Use scissors to cut open the shell on the back, cut away the legs and sharp pieces. Then put back in the marinade to soak for one hour.


8. Prepare the sauce by mixing candied osmanthus with osmanthus wine and Chinese yellow wine.


9. Remove the shell and cut the mantis shrimp into pieces, place on the serving plate.


10. Pour the sauce on top.
