Wineshark Cooking Class - John Dory with Curry Sauce 多利魚配咖哩醬


Ingredients (for 4):

  • John Dory - 4 pieces
  • Olive oil - 2 tbsp
  • Onion - 1/2
  • Black beans - 20 g
  • Ginger powder - 1 tsp
  • Turmeric powder - 1 tsp
  • Red chili powder - 1 tsp
  • Curry powder - 1 tsp
  • Coconut milk - 150 ml
  • Lemongrass - 2
  • Garlic - 4 cloves
  • Olive oil - 2 tsp
  • Salt - 1 tsp
Procedures:

1. Cut the onion into finely. 


2. Cut the garlic into finely. Cut the lemongrass into sections.


3. Heat the saucepan with oil, and then add the onion to stir-fry.


4. Add the minced garlic, black beans, all the different spice powders and continue to stir-fry.


5. Add coconut milk and then the lemongrass, allow to simmer for 15 minutes.


6. Remove the lemongrass and then blend the sauce smoothly. Season with salt.


7. Pan-fry the John Dory with oil on one side for 3-4 minutes.


8. Flip the fish over and continue to pan-fry for another minute.


9. Serve with the curry sauce on top of the fish, along with some green salad and tomato on the side. Use some of the black beans for decoration.
