Wineshark Cooking Class - Fillet of Sole in White Sauce 芝士粟米白汁龍脷柳


Ingredients (for 4):

  • Sole - 450 g
  • Parmesan cheese - 1/4 cup
  • Sweet corn - 1/3 cup
  • Salt - 1/2 tsp
  • Flour - 1 tbsp
  • Milk - 250 ml
  • Butter - 2 tbsp
  • White pepper powder - 1/4 tsp
Procedures:

1. Use kitchen paper to dry the sole fillet. 


2. Drip dry the sweet corn.


3. Pan-fry the sole fillet with oil until golden on both sides.


4. Put the fish fillet on the serving plate.


5. Heat up the milk until boiling.


6. Melt the butter with low heat in the saucepan.


7. Add the flour in and stir well, turn to low heat and cook until fragrant.


8. Add the milk in gradually, use a whisk to ensure the thickening is completely dissolved in the milk.


9. Add the sweet corn and Parmesan cheese, season with salt and white pepper powder. Cook until the sauce thickens.


10. Pour the sauce on the fish fillet and serve.
