Steamed Chicken with Orange Daylily 金針雲耳蒸滑雞

Ingredients (for 4):

  • Chicken - half
  • Orange daylily (Dried lily flower) - 15 g
  • Dried black fungus - 10 g
  • Pickled Kohlrabi - 20 g
  • Red dates - 4
  • Ginger juice - 1 tbsp
  • Spring onion (only the white) - 3
  • Oyster sauce - 1 tsp
  • Salt - 1/2 tsp
  • Sugar - 1/2 tsp
  • Soy sauce - 1 tsp
  • Chinese yellow wine - 1 tsp
  • Potato starch - 1 tsp
  • White pepper powder - 1/4 tsp
Procedures:

1. Prepare the chicken and remove the head and tail, the chop into pieces. Drip dry.

2. Add soy sauce, salt and sugar to the chicken pieces, marinate for 15 minutes. Then add the ginger juice, Chinese yellow wine and potato starch. Mix well.

3. Soak the dried lily flower for a while, then cut into even length.

4. Soak the dried black fungus until they become soft. Then break into smaller pieces.

5. Soak the pickled kohlrabi for a while with water, then cut into strips.

6. Remove the pips from the red dates.

7. Cut the white parts of spring onion into small pieces.

8. Put the chicken on a steaming dish, then mix oyster sauce, white pepper powder and a tablespoon of oil with the black fungus and lily flower, then cover the chicken, along with the red dates, pickled kohlrabi and spring onion.

9. Steam the dish in high heat for 20 minutes.
