Gold and Silver Pig Feet 金銀豬腳

Ingredients (for 4):

  • Chinese ham - 4 pieces
  • Pig feet - 12 pieces
  • Rock sugar - 1 tbsp
  • Chinese yellow wine - 1/4 cup
  • Dark soy sauce - 1 tsp





Procedures:

1. Boil the Chinese ham in hot water for 10 minutes, then remove and flush under running water till cold. Remove the dirt on the skin.

2. Remove the hair on the pig feet and then boil in hot water for a short while. Remove and flush under cold water.

3. Boil the Chinese ham in a pot with water just 1 cm above the ham. Once boiling turn to medium heat and continue to cook for 30 minutes. 

4. Remove the Chinese ham and flush under cold water. Also remove the scum and oil in the soup.

5. Put the Chinese ham back in the pot and continue to cook for another 30 minutes. Then remove the Chinese ham and flush under cold water. Retain the soup.

6. Put the pig feet in a pot and cover with water. Once boiling turn to medium heat and continue to cook for 30 minutes with lid on.

7. Remove the pig feet and flush under cold water. Remove the scum and oil in the soup.

8. Put the pig feet back in the pot and continue to cook for 10 minutes. Then remove and flush under cold water.

9. Repeat the above one more time for the pig feet.

10. Mix the soup of the Chinese ham and pig feet together, and then add the ham and pig feet back in. Add the rock sugar and Chinese yellow wine and continue to cook until one can poke the pig feet and ham through with a chopstick.

11. Continue to cook until the soup is reduced to 1/2 cup, and add dark soy sauce to color the pig feet.
