Wineshark HK Restaurant Review - Kaetsu

This Japanese restaurant is located on the mezzanine floor of Grand Hyatt Hong Kong, with a teppanyaki area in addition to a sushi counter. We were seated at the back of the restaurant, enjoying good privacy but not able to see the 'actions' of the chef. Depending whether you want quiet or action, you should let the restaurant know during booking.

On the night we ordered a 10 pieces assorted sashimi, from five different seafood including Maguro tuna, Hotate scallop, Botan-ebi prime shrimp, Shimaaji striped jack, and Hirame halibut. The seafood is very fresh and of decent size in the cut, but the scallops is too thin that makes me wonder the two pieces are only from a scallop. If that's the case, it would be a bit tricky.

Then we had a Hokkaido crab hotpot, which also has a Geoduck served alongside. The geoduck can be eaten as sashimi or lightly blanched in the hotpot, offering two choices equally tasty. The size of the geoduck is good for two but might not be sufficient for more people. The Hokkaido crab is again right in size for two, served on a pot on stove to keep warm. However, it is still far inferior to what we had tasted a while ago in Japan. The texture of the meat was in my opinion not 'firm' enough. The broth is tasty though, with the vegetable, tofu, rice pudding and glass noodle all good complement.

Wrapping up I ordered a sesame ice-cream as dessert. The sesame flavor is intense and the homemade ice-cream is quite nice also.

The service is quite good with the staff attentive but a bit lacking the experience I would expect for such high-end hotel's restaurant, for example I would expect the staff to provide an utensil for holding the crab shells, without having to be requested by us. But overall they are friendly, do come frequently to clean up and check whether how we are doing during the meal.

The bill on the night was $3047 which is not cheap. Even though the food is fairly good it would still be a bit too expensive. Probably it would be of better value for money on lunch. My overall rating is 60/100.
