Nutritionist Recipe - 15. Pan-fried Assorted Vegetables Stuffed with Minced Dace Fish

Ingredients (for 4):

  • Small green bell pepper - 4
  • Red/Orange/Yellow bell pepper - 3
  • Dried shiitake mushroom - 2
  • Dace fish meat - 400 g
  • Fermented black beans - 2 tbsp
  • Garlic - 2 cloves
  • Red chili - 1
  • Black pepper powder - 1 tsp
  • Starch - 1 tsp
  • Sugar - 1 tsp
  • Oil - 1 tsp
Procedures:

1. Cut the bell peppers in halves, remove the seeds and clean. Drip dry.

2. Soak the dried shiitake mushroom until softened, then cut into finely.

3. Clean the fermented black beans and then crush using the back of a spoon.

4. Peel the garlic and cut into finely.

5. Remove the stem of the red chili and cut into small pieces.

6. Mix the dace fish meat with dried shiitake mushroom and black pepper powder.

7. Brush the inside of bell pepper with starch, then stuff with the minced dace fish meat.

8. Heat the pan with oil, then pan-fry the bell pepper, first on the side of the fish meat, until golden brown.

9. Flip to the other side and then add 1/3 bowls of water, and cover with lid until the water is all evaporated.

10. Serve on a dish.

11. Heat the pan with oil, then add garlic and fermented black beans until fragrant, then add chili and sugar.

12. Add 1/2 bowl of water and stir well. Then add the starch with water to thicken the sauce.

13. Serve alongside the bell pepper.
