Wineshark Home Cooking - 2. Catalan-style turkey

Ingredients (for 4):

  • Raisins - 45g
  • Pitted prunes - 80g
  • Vino rancio - 125 ml
  • Red onions, thinly sliced - 300 g
  • Turkey drumsticks - 4
  • Olive oil - 2 tbsp
  • Tomatoes, chopped - 125 g
  • Water - 360 ml
  • Pine nuts - 4 tsp

Procedures:

1. Put the raisins and prunes in a bowl and pour over the vino rancio.

2. Leave to soak for 12 hours.

3. Thinly slice the onions.

4. Season the turkey with salt and pepper.

5. Put a wide pan over a medium heat, then add most of the oil. Brown the turkey for 10 minutes until golden all over.

6. Add the onions.

7. Fry the onions and turkey for about 10 minutes, stirring often, until the onions are caramelized and dark golden brown.

8. Drain the vino rancio from the fruit, then add to the pan.

9. When most of the vino rancio has evaporated, add the chopped tomato and continue to cook until everything is well caramelized.

10. Pour in the water, turn the heat down and simmer for 30 minutes.

11. Add the raisins and prunes. Cover the pan and leave to cook for another hour, or until the turkey is very tender and the sauce is thick and tasty.

12. Meanwhile, heat the remaining oil in a frying pan, then add the pine nuts. Cook over a low heat for about 5 minutes, stirring often, until golden.

13. Put the turkey onto a serving dish, cover with the sauce, raisins and prunes. Finish by sprinkling with pine nuts.
