Wineshark Cooking Class - Braised Mackerel Steak 煎封鮫魚扒


Ingredients (for 4):

  • Spanish mackerel - 2 pieces
  • Ginger - 10 g
  • Salt - 1/2 tsp
  • White pepper powder - 1/4 tsp
  • Sugar - 2 tsp
  • Chicken stock - 125 ml
  • Dark soy sauce - 1 tsp
  • Worchestershire sauce - 1 tbsp
  • Tomato ketchup - 1 tbsp
  • Spring onion - 3 sprigs
Procedures:

1. Clean the Spanish mackerel steak and drip dry. Then marinate with salt and white pepper powder for 20 minutes. Use kitchen paper to wipe dry the surface afterwards.


2. Cut the ginger into slices. Chop the spring onion into sections.


3. Heat the wok with 2 tbsp of oil, turn to medium heat and pan-fry the Spanish mackerel steak to golden on both sides. Then remove.


4. Mix the chicken stock with sugar, dark soy sauce, Worchestershire sauce and tomato ketchup.


5. Heat the wok with 1 tbsp of oil, turn to medium heat, then add the ginger to stir-fry briefly.


6. Add in the spring onion. Stir-fry until fragrant.


7. Add the sauce and bring to boiling.


8. Add in the Spanish mackerel steak and cook each side for one minute. 


9. Turn to high heat to reduce the sauce to almost dry.


10. Serve.
