Wineshark Cooking Class - Basic Consomme 清湯膽


Ingredients (for 4):

  • Chicken breast - 1 lb
  • Black peppercorn - 6 
  • Bay leaf - 1
  • Carrot - 3 oz
  • Celery - 2 oz
  • Onion - 3 oz
  • Leek - 2 oz
  • Salt - 1 tsp
  • Sugar - 1/4 tsp
  • Egg white - 1
  • Chicken stock - 3 lb
Procedures:

1. Shred the carrot, onion, celery and leek.


2. Mince the chicken breast. 


3. Mix the shredded vegetables, minced chicken, black peppercorn, bay leaf together. Smash a few times to make the mixture bouncy.


4. Heat the chicken broth, and then add the mixture in. Cook for 1 to 1.5 hour under low heat.


5. Use a sieve and towel to filtrer the consomme.
