Wineshark Cooking Class - Shrimp and Sea Cucumber Salad with Chili Pepper Dressing 蝦球海參燒椒汁


Ingredients (for 4):

  • Sea cucumber - 300 g
  • Shrimp - 300 g
  • Green chili - 4
  • Lemon juice - 1 tbsp
  • Salt - 1/4 tsp
  • Sugar - 1/2 tbsp
  • Black pepper finely - 1/2 tsp
  • Olive oil - 1 tbsp
Procedures:

1. Prepare the sea cucumber.


2. Blanch the sea cucumber in hot water. After the sea cucumber cooled down, cut into pieces about 2cm in size.


3. Remove the shell of the shrimps and intestines.


4. Cook the shrimps and then remove.


5. Remove the seeds of the green chili.


6. Roast the green chili over open fire.


7. Remove the burnt skin, then cut the green chili into small pieces.


8. Mix the green chili with lemon juice, salt, sugar, black pepper finely and olive oil.


9. Mix the sauce with the sea cucumber pieces and shrimps. 


10. Serve.
