Wineshark Cooking Class - Pan-fried Leek and Miso Chicken Wings 醬燒蔥味噌雞翅


Ingredients (for 4):

  • Chicken wings - 12
  • Leek - 1
  • Marinade
    • Sake - 3 tbsp
    • Mirin - 3 tbsp
    • Miso - 2 tbsp
  • Oil - 1 tbsp
  • Lettuce - 1/6
  • Red chili powder - dashes
Procedures:

1. Cut the leek into small pieces.


2. Mix sake, mirin and miso together.


3. Add the leek to the marinade.


4. Poke the chicken wings with fork on both sides.


5. Cut the lettuce into shreds.


6. Marinate the chicken wings in the marinade for 15 minutes.


7. Wipe dry the chicken wings and then pan-fry skin-down under medium heat. 


8. Flip the chicken wings over when there are charred marks. Lower the heat a bit and continue to pan-fry until the other side also got charred marks.


9. Turn off the heat and cover with lid to let the inside cooked through as well.


10. Turn back the heat, then add the marinade to the chicken wings.


11. Put the shredded lettuce on the plate, then put the chicken wings on top. Scatter with a bit of red chili powder.
