Wineshark Cooking Class - Watercress and Caviar Soup 魚子醬西洋菜湯


Ingredients (for 4):

  • Onion finely - 3 oz
  • Spring onion - 2 sprigs
  • Garlic - 1 tsp
  • Potato - 12 oz
  • Fish stock - 2 lb
  • Watercress - 8 oz
  • Salt - 1 tsp
  • White pepper powder - 1/4 tsp
  • White wine - 2 oz
  • Caviar - 1 tsp
Procedures:

1. Chop the onion finely.


2. Cut the spring onion into small pieces.


3. Peel the potato and cut into thin slices.


4. Cut the garlic finely.


5. Heat the pot with a bit of oil, then add the onion to saute until fragrant.


6. Add in spring onion and garlic.


7. Pour in the fish stock and potato slices. Cook for 15 minutes until the potatoes are soft.


8. Add the watercress and continue to cook for 5 minutes.


9. Blend the vegetables and soup.


10. Reheat the soup, season with salt and white pepper powder. Add in white wine. Serve with caviar on top.
