Wineshark Cooking Class - Double-boiled Sweet Egg 燉甜蛋


Ingredients (for 4):
  • Condensed milk - 200 g
  • Egg - 6
  • Sugar - 1/2 cup
  • Vanilla extract - 1/2 tsp
Procedures:

1. Pour the sugar in a pan and add 2 tbsp of water, then heat and mix until the sugar has fully dissolved. Lower down the heat and continue to stir until the syrup thickens and turns brown.


2. Pour the caramel on a baking cup. 


3. Pour the condensed milk in a large bowl, add 200 ml of water and mix well.


4. Whisk the eggs.


5. Use a sieve and pour the egg into the condensed milk mixture. Mix well.


6. Pour the mixture in the baking cup, filling to about 80%. 


7. Put the baking cups in a baking tray and fill with water to half the height of the cups.


8. Put the baking tray in oven, pre-heated to 180 degree Celsius, and bake for 30 minutes. 


9. Shake the cup and see if it is solid. If so, remove and put the cup in a tray with cold water.


10. Use a knife to detach the pudding from the cup, then flip it over on a plate.
