Whiting in Salsa Verde

Ingredients (for 4):

  • Fresh whole whiting - 4
  • Salt - 1 pinch
  • Garlic cloves - 6
  • Fresh parsley - 2 tbsp
  • Extra-virgin olive oil - 2 tbsp
  • Flour - 1 tsp
  • Water - 175 ml



Procedures:

1. Cut the heads from the whiting, then season with a little of the salt.

2. Finely chop the garlic.

3. Place a large pan over a low heat, then pour in the oil. Add the garlic and fry it gently for 1-2 minutes until softened but not browned.

4. Finely chop the parsley and stir the flour into the oil and garlic, and fry for 30 seconds. Add half the chopped parsley.

5. Pour in the water and simmer the sauce for 10 minutes, stirring occasionally, until it thickens slightly.

6. Place the fish in the sauce and simmer for 10 minutes, until the flesh flakes easily.

7. Season the sauce with salt, then scatter with the rest of the parsley.
