Wineshark Home Cooking - 59. Gold and Silver Pig Feet

Ingredients (for 4):

  • Ham feet - 4 pcs, around 250g
  • Pig feet - 12 pcs, around 400g
  • Rock sugar - 1 tbsp
  • Chinese yellow wine - 1/4 cup
  • Dark soy sauce - 1 tsp






Procedures:

1. Boil the ham feet under hot water for 10 minutes, then flush under running cold water and remove the dirt on the skin. Remove the bone marrow.

2. Remove the nails from the pig feet as well as the hair, then blanch in boiling water for a while.

3. Put the ham feet in a pot and cover with water, about 1 cm above the feet. Then cook under high heat and once boiling, then turn to medium heat and cook for 30 minutes without lid. 

4. Remove the ham feet and flush under cold water.

5. Remove any debris on the soup, then put the ham feet back in and cook for another 30 minutes.

6. Put the pig feet in a pot, adding just sufficient water to cover the feet. Once boiling, turn to medium heat and cook for 30 minutes. 

7. Remove the pig feet and flush under cold water, then put back into the soup and cook again for 10 minutes.

8. Remove the pig feet and flush under cold water. Repeat the cooking and cooling once more.

9. Put the ham feet into the pot with the pig feet, along with the soup. Add rock sugar, Chinese yellow wine, and continue to cook until the chopstick can easily penetrate the meat.

10. Continue to reduce the sauce till 1/2 cup, and then add dark soy sauce to improve the color.
