Wineshark Home Cooking - 32. Prawn and Crab Bisque

Ingredients (for 4):

  • Prawn - 6 oz
  • Crab - 6 oz
  • Butter - 1 oz
  • Onion sliced - 3 oz
  • Carrot sliced - 3 oz
  • Celery sliced - 2 oz
  • White wine - 4 oz
  • Water - 2 lb
  • Rice - 1.5 tbsp
  • Tomato - 13 oz
  • Salt - 1 tsp
  • White pepper powder - 1/4 tsp
  • Whipping cream - 4 oz
Procedures:

1. Take away some of the prawn for the meat, then blanch the crab, taking the meat afterwards.

2. Chop the prawn and crab shell, then saute with butter.

3. Add the vegetable and saute for about 10 minutes, then add white wine.

4. Add water, rice, and tomato to cook for another 45 minutes.

5. Blend and then filter using a mesh.

6. Season and then add the whipping cream.

7. Serve with the prawn and crab meat together.
