Wineshark Recipe - 63. Cream of Chickpeas Soup

Ingredients:
  • Vegetable oil - 2 tbsp
  • Onion shredded - 6 oz
  • Celery - 2 oz
  • Bacon - 2 strips
  • Bay leaf - 2 pcs
  • Chickpeas - 10 oz
  • Stock - 2 lb 8 oz
  • Salt - 1 tsp
  • White pepper powder - 1/4 tsp
  • Dry white wine - 1 oz
  • Whipping cream - 2 oz
First saute the onion with the vegetable oil, then add celery and bacon for a short while. Add chickpeas and bay leaf.

Add stock to cook for another 20 min, then cool down the soup before put in a blender.

Once it is fully blended, re-heat the soup and add seasonings, white wine and cream.
