Ingredients (for 4):
- Oysters - 2 cups
- Flour - 1/2 cup
- Oil - 2 tbsp
- Ginger - 30 g
- Garlic - 2 cloves
- Spring onion - 6 sprigs
- Sesame oil - 1 tsp
- Chicken stock - 1/4 cup
- Oyster sauce - 1 tbsp
- Soy sauce - 1 tsp
- White pepper powder - dashes
- Sugar - dashes
- Salt - dashes
- Corn starch - 1 tsp
Procedures:
1. Pour the oysters out from the container and drain the water inside. Then mix with flour and lightly massage to remove the dirt.
2. Clean the oysters under water to remove the flour and dirt, paying extra attention on the skirt.
3. Heat a pot of water till boiling, then pour in the oysters. Remove when the water boils again.
4. Wipe dry the oysters with kitchen paper.
5. Cut the ginger into shreds, smash the garlic, and cut the spring onion into sections.
6. Heat the wok on medium-high level, then pour in the oil. Add the ginger to stir-fry until fragrant.
7. Add the garlic and continue to stir-fry.
8. Add the white section of the spring onion.
9. Then add the oysters and continue to stir-fry until there is no jus seeping out from the oysters anymore.
10. Mix the chicken stock, oyster sauce, soy sauce, white pepper powder, sugar and salt.
11. Pour in the sauce and continue stir-fry.
12. Mix the corn starch with 2 tbsp of water, then pour in to thicken the sauce.
13. Add sesame oil, then the green parts of spring onion. Stir-fry a few times and serve.
