Wineshark Cooking Class - Deep Fried Grenadier Anchovy 蜜汁鳳尾魚


Ingredients (for 4):

  • Grenadier Anchovy - 600g
  • Ginger - 10g
  • Garlic - 2 cloves
  • Salt - 1/2 tsp
  • Sugar - 3 tbsp
  • Chinese yellow wine - 1 tbsp
  • Fish sauce - 1 tsp
  • White pepper powder - dashes
Procedures:

1. Clean the grenadier anchovy.


2. Remove the head and guts. Then clean thoroughly.


3. Marinate with salt and white pepper powder for 20 minutes. Then use kitchen paper to soak dry.


4. Chop the garlic finely.


5. Chop the ginger finely.


6. Heat the pan with oil, then deep fry the grenadier anchovy until crispy. 


7. Remove the drip off the oil.


8. Heat the pan with a tablespoon of oil, then add the ginger and garlic to stir fry. Add sugar and 2 tablespoon of water, fish sauce together.


9. Add back the grenadier anchovy to stir fry together.


10. Spray with Chinese yellow wine and cook until the sauce has dried up.


11. Serve.
