Wineshark Cooking Class - Cucumber Boat Stuffed with Thousand Island Dressing 鮮蝦釀青瓜船配千島汁


Ingredients (for 4):

  • Cucumber - 1 
  • Cherry tomato - 16
  • Frisee - 2 sprigs
  • Prawns - 20
  • Salt - 1 pinch
  • White pepper powder - 1 pinch
  • Lemon juice - 1 tbsp
  • Brandy - 1 tsp
  • Parsley - 1 tsp
  • Onion - 1/2
  • Sweet gherkins - 4 
  • Egg - 1
  • Mayonnaise - 4 tbsp
  • Cold boiled water - 2 tbsp
  • Brandy - 1 tsp
  • Tomato ketchup - 1 tbsp
Procedures:

1. Boil a pot of water with half an onion, several slices of lemon, bay leaves, black peppercorns for 10 minutes.


2. Put the prawns in and cook for 6 minutes. 


3. Remove the prawns and flush in cold water.


4. Remove the shell of the prawns.


5. Finely chop the onion.


6. Boil the egg for 8 minutes, then remove the shell and finely chop.


7. Finely chop the sweet gherkins.


8. Mix the onion, egg, sweet gherkins with mayonnaise, tomato ketchup, brandy and boiled water to form the thousand island dressing. Keep in fridge. 


9. Season the prawns with salt, white pepper powder, lemon juice and brandy.


10. Peel the cucumber and cut in halves. Cut along the length and remove the seeds.


11. Put the frisee on the plate, and then put the cucumber on top. 


12. Put the thousand island dressing on the cucumber boat.


13. Put the prawns in the middle, and the cherry tomato on the side. Sprinkle with the parsley to serve.
