Wineshark Cooking Class - White Croaker with Chinese Leeks 唐蒜煮䱛仔


Ingredients (for 4):

  • White croaker - 400 g
  • Chinese leek - 2
  • Ginger - 4 slices
  • Fish sauce - 1 tbsp
  • Chicken broth - 125 ml
  • Sugar - 1 tsp
Procedures:

1. De-scale and then remove the head and guts of the white croaker. Clean and drip dry.


2. Cut the Chinese leek into sections of 6cm. 


3. Pan-fry the white croaker with oil until golden on one side.


4. Flip the fish over and continue to pan-fry the other side until golden also.


5. Remove the white croaker for later use.


6. Heat the wok with oil, then add the ginger slices. 


7. Once fragrant, add in the Chinese leek and continue to stir-fry briefly.


8. Add chicken broth, fish sauce and sugar. Let it simmer until the Chinese leek are softened.


9. Put the white croaker back in and cook for 2 minutes.


10. Serve with the stock as well.
