Wineshark Cooking Class - Braised Pig Tongue with Potatoes

Ingredients (for 4):

  • Pig tongue - 1, around 400 g
  • Potatoes - 400 g
  • Ginger - 30 g
  • Bean paste - 2 tbsp
  • Rock sugar - 15 g
  • Rice wine - 1 tbsp
  • Salt - 1 tsp



Procedures:

1. Clean the pig tongue and put in boiling water for 10 minutes.

2. Remove the pig tongue and wash under running water, when it is cooled down remove the white skin on the tongue. Cut into thick slices.

3. Peel the ginger and cut into slices.

4. Peel the potatoes and cut into pieces.

5. Heat the pot with 2 tbsp of oil, then add the ginger and stir-fry until fragrant.

6. Add the bean paste and pig tongue, then to stir-fry, and add salt, rice wine, rock sugar and 1 cup of water. Turn the heat to low and simmer for 15 minutes.

7. Add the potatoes pieces and when it boils again, turn the heat low to simmer for another 20 minutes. then turn off the heat and leave the lid on for another 10 minutes.
