西洋菜陳腎豬踭湯

Ingredients (for 4):

  • Pork shoulder - 400 g
  • Watercress - 650 g
  • Dried duck kidney - 4
  • Honey dates - 2
  • Ginger - 6 slices
  • Salt - 1 tsp




Procedures:

1. Wash the pork shoulder and blanch briefly in boiling water for a short while.

2. Soak the watercress in water and wash. Then drip dry.

3. Remove the pit from the honey dates.

4. Soak the dried duck kidney in water for an hour.

5. Boil 12 cups of water, and then put in ginger, pork shoulder and dried duck kidney. Cover with lid to boil in high heat for 15 minutes.

6. Turn the heat to low and continue to boil for 90 minutes, and then add the watercress and honey dates. Continue to boil for 30 minutes. Season with salt before serving.
