Caesar Salad

Ingredients (for 4):

  • Garlic - 2 cloves
  • Anchovy fillets - 4 strips
  • Egg yolk - 2
  • Sherry vinegar - 2 tbsp
  • Extra-virgin olive oil - 100 ml
  • Parmesan cheese - 20 g
  • Butter lettuce - 1 head
  • Croutons - 30 g
  • Parmesan cheese - 20 g

Procedures:

1. Chop the garlic and put into a bowl.

2. Chop the anchovy fillets finely and put into the bowl.

3. Break the eggs and only use the yolk, add to the bowl.

4. Blend well the mixture until smooth.

5. Pour in the olive oil gradually while blending all the while until the sauce becomes thickened like mayonnaise.

6. Add the Sherry vinegar to mix well, then add Parmesan cheese.

7. Wash the butter lettuce and break into pieces, then put the lettuce into a large mixing bowl. 

8. Add the dressing and toss.

9. Put the salad into a serving bowl, then sprinkle with Parmesan cheese.

10. Scatter the croutons on top.
