Wineshark Recipe Card - Prawn Fritter with Tartare Sauce

First we make the tartare sauce.

Ingredients:
  • Onion finely - 1.5 oz
  • Sweet pickle - 1.5 oz
  • Parsley chopped - 1 tsp
  • Mayonnaise - 5 oz
  • Brandy - 1 tsp
Procedures:

1. Chop the onion into finely.

2. Chop the sweet pickle into finely.

3. Chop the parsley into finely.

4. Mix the onion, pickle and parsley together.

5. Add mayonnaise and brandy to the finely, then mix well.


Then we prepare the prawn fritters.

Ingredients:
  • Prawn - 3-4 per person
  • Corn starch - 0.5 oz
  • Flour - 2 lb
  • Sugar - 1 oz
  • Baking powder - 2 tsp
  • Water - 2 lb 14 oz
  • Salt - 1 oz
  • White vinegar - 1 oz
  • Parsley chopped - 1 tsp
  • Oil - 6 oz
Procedures:

1. Sieve the flour and then add all the ingredients into a bowl.

2. Add water and stir well.

3. Add oil and parsley finely.

4. Remove the shell of the prawns.

5. Cut the back of the prawns and flatten it.

6. Dip into the fritter mix.

7. Fry in hot cooking oil.
