Wineshark Cooking Class - Stir Fried Ridged Luffa with Pork 絲瓜雲耳炒肉片


Ingredients (for 4):

  • Ridged luffa - 600 g
  • Pork - 600 g
  • Black fungus - 10 g
  • Shallot - 3
  • Ginger - 10 g
  • Garlic - 2 cloves
  • Salt - 1 tsp
  • Sugar - 1 tsp
  • Soy sauce - 1 tsp
  • Corn starch - 1 tsp
  • White pepper powder - 1/4 tsp
  • Sesame oil - 1/2 tsp
Procedures:

1. Soak the black fungus with water until softened, then blanch in boiling water until cooked.


2. Peel the ridged luffa, and then cut into pieces.


3. Cut the shallot into small pieces, garlic and ginger into slices.


4. Cut the pork into slices.


5. Marinate the pork with soy sauce, sugar, white pepper powder and 1 tbsp of water for 5 minutes. Then add the corn starch and mix well.


6. Heat the wok with 2 tbsp of oil at high heat, then add the ginger, garlic and shallot to stir-fry until fragrant.


7. Add the pork and continue to stir-fry until about 80% cooked.


8. Add the ridged luffa and stir-fry to about 60% done.


9. Add the black fungus and mix well. Season with salt. Finish with the drizzle of sesame oil.
