Ingredients (for 4):
- Prawns - 8
- Ginger - 20 g
- Spring onion - 2 sprigs
- Chinese yellow wine - 1 tbsp
- Soy sauce - 1.5 tbsp
- Dark soy sauce - 1/2 tsp
- Sugar - 1 tbsp
- Sesame oil - 1 tsp
Procedures:
1. Cut the spike, claws and legs of the prawn. Then cut open about 2cm of the shell from the intersection between head and body towards to the tail. Remove the intestines.
2. Chop the spring onion into small pieces. Cut the ginger into small pieces.
3. Mix the soy sauce, dark soy sauce and sugar in a small bowl.
4. Heat the wok with 2 tbsp of oil, then pan-fry the prawns on both sides until cooked.
5. Add the ginger to stir-fry, then sprinkle with Chinese yellow wine and the sauce.
6. Add the spring onion and continue to stir-fry until the sauce is dried up. Add the sesame oil to wrap up.
