Ingredients (for 4):
- Dried shiitake mushroom - 8
- Oyster sauce - 3 tsp
- Soy sauce - 3 tsp
- Chinese yellow wine - 3 tsp
- Sesame oil - 1 tbsp
- Egg Noodle - 120 g
- Bacon - 80 g
- Spring onion - 2 sprigs
- Ginger - 2 tbsp
- Beansprouts - 50 g
- Oil - 1 tsp
Procedures:
1. Put the shiitake mushroom into a large bowl, cover with water and soak for 1 hour.
2. Remove the stem. Cut the mushroom into strips.
3. Pour the oyster sauce into a bowl, add soy sauce, Chinese yellow wine and sesame oil.
4. Bring a pan of water to boil, the add the noodles and cook for 2 minutes.
5. Drain the noodles thoroughly and tip into iced water to cool completely.
6. Cut the bacon into strips.
7. Chop the spring onion into sections.
8. Peel the ginger and chop finely.
9. Heat the oil in a large pan then add the bacon and fry until turning color.
10. Add the chopped ginger and shiitake mushrooms and fry for 1-2 minutes.
11. Add the spring onion and continue to stir fry.
12. Add the noodles and beansprouts. Stir-fry for 5 minutes.
13. Pour in the sauce to mix well.
