Ingredients (for 4):
- Scallops - 350 g
- Chinese yellow wine - 2 tsp
- Scallion - 1
- Salt - 1/4 tsp
- Red chili - 2, cut into thin julienne
- XO sauce - 2 tbsp
- Oil - 2 tbsp
Procedures:
1. Blanch the scallops in boiling water for a very short while, then remove and drip dry.
2. Cut the white part of scallion in half, then cut into thin julienne. Cut the green part of scallion diagonally.
3. Heat the pan to medium degree, then add the oil in. When the oil is hot then add the scallops and quickly stir fry for a short while. Remove and drip dry.
4. Cook the scallion with some oil until softened. Add some salt to season. Then remove.
5. Wipe dry the pan and add the XO sauce to stir fry.
6. Add the scallops and stir fry. Spray with Chinese yellow wine.
7. Add the scallion and red chili and continue to stir fry. Then serve.
