Wineshark Cooking Class - Sesame Shrimp Cake 芝麻蝦餅


Ingredients (for 4):

  • Shrimps - 500g
  • Sesame - 1/4 cup
  • Sugar - 1/2 tsp
  • Salt - 1/4 tsp
  • Garlic salt - 1 tbsp
Procedures:

1. Remove the shell of the shrimps.


2. Marinate the shrimps with 1 tbsp of coarse salt for 3 minutes. Then wash thoroughly.


3. Put the shrimps on kitchen paper to soak dry. Then cover with kitchen paper and put in fridge for 2 hours.


4. Remove the intestines from the shrimps, then flatten and mince well with the other side of the chopper. Chop a few times using the sharp edge.


5. Put the shrimp patty in a bowl and smash it repeatedly to make it sticky. Then season with sugar. Mix well. Then add in the salt. Mix well.


6. Rub the palms with some cooked oil, and take some shrimp patty to roll into a ball, then flatten it. Coat it with sesame. 


7. Heat the pan with a bit more oil, then pan-fry the shrimp cake until golden brown, flipping over once a side is done, so both sides are golden brown.


8. Remove and can cut into strips for splitting up the cakes for more people. Serve with the garlic salt for additional seasoning.
