Wineshark Cooking Class - Soup of the Seven Seas

Ingredients (for 4):

  • Butter - 2 oz
  • Flour - 2 oz
  • Fish stock - 1 litre
  • Milk - 2 oz
  • Salt - 1 tsp
  • White pepper powder - 1/4 tsp
  • Whipping cream - 2 oz
  • White wine - 2 oz
  • Diced white fish - 4 oz
  • Whole kernel corn - 2 oz
  • Diced onion - 2 oz
  • Green peas - 2 oz
Procedures:

1. Blanch the fish and onion for a short while.

2. Melt the butter in a pot under low heat, and then add in the flour. Continue to cook until the fragrant.

3. Gradually add in the fish stock, continue to whisk to mix well.

4. Add the remaining of the fish stock and cook for 15 minutes.

5. Add the milk, whipping cream and white wine. Season with salt and white pepper powder.

6. Add the fish, onion, corn and peas into the soup. 

7. Serve with some whipped cream on top and put in oven for a short while until the surface turns golden brown.
