Ingredients (for 4):
- Lotus root - 600 g
- Dried octopus - 60 g
- Pork shank - 600 g
- Mung beans - 50 g
- Ginger - 4
- Salt - 1 tsp
Procedures:
1. Wash the pork shank and put in boiling water for a short while.
2. Clean the lotus root and cut into thick slices.
3. Soak the mung beans in water for 30 minutes.
4. Soak the dried octopus in warm water for 30 minutes.
5. Boil a pot of water, then add the ginger, pork shank, lotus root and dried octopus in, turning up the heat and cover with lid to boil for 10 minutes.
6. Lower the heat and continue to boil for 2.5 hours. Then season with salt before serving.
