Wineshark Cooking Class - 13. Pork Loin Stuffed with Mushroom

Ingredients:
  • Pork loin - 12 oz
  • Onion finely - 1 oz
  • Garlic finely - 1 tsp
  • Chopped mushroom - 1 oz
  • Chopped dark mushroom - 1 oz
  • Black pepper finely - 1/2 tsp
  • Mixed herbs - 1 tsp
  • Salt - 1/2 tsp
  • Butter - 1/2 oz
  • White wine - 1/2 oz
  • Calvados - 1 tsp
  • Brown sauce - 8 oz
  • Whipping cream - 1 oz
Procedures:

1. Slide the pork loin in half.

2. Use butter to sautee the onion.

3. Add the mushroom and mixed herbs, then add white wine and calvados.

4. Add black pepper and salt, with a bit of brown sauce. When it is done, let it cool down.

5. Stuff into the pork loin.

6. Put in oven for about 30 minutes.

7. Mix the brown sauce with the juice left on the tray, then add whipping cream and cook for a while, before pouring on top of the pork loin.
