Wineshark HK Restaurant Review - Double Boiled Chicken Consomme with Snow Fungi 雪耳雞清湯


Ingredients (for 4):

  • Chicken breast - 2 oz
  • Snow fungi - 1 oz
  • Sherry - 1 tsp
  • Parsley - 1 pinch
  • Chicken consomme - 2 lb 8 oz
Procedures:

1. Cut the chicken breast into shreds.


2. Soak the snow fungi in water for 30 minutes.


3. Cut out the bottom and then shred the snow fungi.


4. Blanch the chicken shreds, then remove.


5. Heat the chicken consomme and then add the snow fungi to cook for 15 minutes under low heat.


6. Add the sherry wine. 


7. Serve by putting the chicken shreds on the bowl, then pour in the soup and snow fungi. Sprinkle with parsley.
