Ingredients (for 4):
- Beef shin - 1 piece (500 g)
- Oil - 2 tbsp
- Shallot - 20 g
- Garlic - 10 g
- Ginger - 20 g
- Chinese celery - 25 g
- Spicy bean sauce - 20 g
- Red chili - 2
- Water - 1.2 litre
- Soy sauce - 160 g
- Maggi's seasoning - 40 g
- Chinese yellow wine - 60 g
- Dark soy sauce - 1 tbsp
- Sacha sauce - 1 tbsp
- Oyster sauce - 20 g
- Salt - 10 g
- Chinese five spice - 1 tbsp
- Chili powder - 1 tbsp
- Slab sugar - 160 g
Procedures:
1. Defrost the beef shin and remove the tendon.
4. Cut the Chinese celery into sections, cut the red chili into pieces, cut the shallot, garlic and ginger into slices.
5. Heat the wok with oil, and then add the prepared shallot, garlic, ginger, Chinese celery, red chili and spicy bean sauce to stir fry until fragrant.
6. Pour the mixture into a pot with water, and then add the remaining ingredients of soy sauce, Maggi's seasoning, Chinese yellow wine, dark soy sauce, Sacha sauce, oyster sauce, salt, Chinese five spice, chili powder and slab sugar.
