Ingredients (for 4):
- Salmon fillet - 4 pieces
- Salt - 1/2 tsp
- Black pepper finely - 1/4 tsp
- Flour - 1 tbsp
- Clarified butter - 3.5 oz
- Egg yolks - 2
- Cayenne powder - 1 pinch
- Lemon juice - 1.5 tsp
Procedures:
1. Season the salmon with salt and black pepper finely.
4. Whisk the egg yolk on a warm water bath after adding the lemon juice. Gradually add the clarified butter. Season with cayenne powder to form the Hollandaise sauce.
